Lunches on the Go

Well, as most of you are aware, I have joined the 9-5 crowd.  This explains my infrequent forays into the blogosphere these days.  Not only is there just a lot less time (thanks to the commute, plus the fact that I’m working 6 days a week while also finishing a contract gig), but my wrists and back are not loving enforced, back-to-back hours at the computer.  In any case, I thought I’d take a few minutes for a short update on what I’ve been figuring out after a month of trucking lunches to work again for those of you looking for ideas!  In no particular order, here are some of my favorites.

  • Peanut butter and banana sandwiches on sprouted cinnamon raisin bread
  • Cucumber, tomato, feta, and olive chopped salad
  • Hummus with a variety of dipping vegetables
  • Plenty of fresh fruit (with or without yogurt) for snacking
  • Avocado sandwiches with lettuce and tomato on lightly toasted bread
  • Trail mix (that I mix myself) for snacking
  • Cold grilled eggplant with cream cheese, tomato, and lettuce on toasted bread or a fresh, whole-grain bagel
  • Curry (eaten at room temp, as I dislike the microwave)
  • Smoothies (loads of frozen fruit and yogurt from grass-fed cows)

I’m starting to feel the need for more creativity, however…I will let you know what I dream up as the summer progresses!  I’m sure our farm goodies will provide inspiration.  Tomatoes and sweet corn are coming ripe, as are loads of summer squash.  Expect an update this weekend sometime!  In the meantime, what dishes are you enjoying for work lunches or picnics these days?

    I’ve been packing 2 salads this week…
    Brown rice w/ garbanzo beans and tomatoes, with oil and red wine vinegar dressing and some crushed red pepper…really good chilled

    Greek pasta salad with bow-tie pasta, feta, black olives, tomatoes, red onion, olive oil, basil, mint, salt, pepper and lemon zest, also chilled deliciousness

    I’m looking for some ways to incorporate more tofu though, any suggestions?

    I’ve been waiting for fresh fruit, as that is one of my fav work eating options – unfortunately, it is a bit early for this here in CT. Lately I’ve been having these great wholemeal rolls I’ve made with various homemade bean spread in my lunches. Since lettuces/mesclun and other greens are starting to make a comeback, often I’ll have a huge salad with some beans, cucumbers and radishes. What else? I don’t know, as *I* too am always needing more ideas.
    How do you make the sprouted raisin bread? I have a lot of dried cranberries from the winter and I bet that’d work as well in the bread…

    I’ve been following your advice and doing a lot of pre-packing. This week, I had a greek brown rice salad with cucumber, red onion, feta cheese, kalamata olives, and an olive oil/mint/lemon juice/lemon zest dressing. Before that,it was a wild rice salad from the Moosewood Cookbook you sent me. I’ve also enjoyed wraps with hummus and whole wheat tortillas.

    Congrats on the job (?) While I’m no longer 9-5ing it, my tip to you is something I relied on when I still had a commute. A subway commute too, so lots of jostling around! My secret is Lock-n-lock containers. Do you have ‘em? you can bring soup, throw it in your purse, and no worries bc it won’t leak. Amazing little things.
